If I'm currently getting 68.3% in math, and tests are worth 75% of my mark, what mark would I get if I supposedly got 40/40 on a test?

Not enough information. How many tests? How many total points in the class?
For example, if the class has a lot of tests, 40 points doesn't mean that much...
Pretend the class has 9 tests, each worth 40, that's 360 points, which means the class has a total of 480 points.
Let's say you're sitting at 68.3% with only one 40 point test left. 0.683(440) =~ 301 points you have. Now you ace the last test, that's 341 / 480 =~ 71%
So, the fewer the tests, the more weight a single test carries...
3 total tests: 0.683(80) =~ 54.6 points => ace last one => grows to about 79%
5 total tests: about 74.6%
7 total tests: about 72.8%
What you need to know is the total points you will have earned divided by the total points for the class up until then.
