but the boiling water from saucepan stays hot much much longer than the one heated in kettle. am i right? if so, then why?-heating water under gas tends to give a larger spread of heat, and holds it longer,......
in my experience i have have found out that heating the water in saucepan on gas heat to boiling is a bit slower process thatn heating it in kettle. but the boiling water from saucepan stays hot much much longer than the one heated in kettle. am i right? if so, then why?

heating water under gas tends to give a larger spread of heat, and holds it longer, This is because the saucepan/kettle holds the heat. A kettle element does not stay on long enough to heat the area around the Jug/kettle and loses heat quicky. This also applies to immersion heaters.

Lets assume to start with that the amount of heat applied by both methods is the same.- and the volume of the water is the same.

heating water in a saucepan means a lot of heat is wasted heating up the container itself (which can be quite thick) and even more heat is wasted if you don't put the lid on.

With a kettle the lid is always on and the thickness of the sides of it are less so it heats up quicker, therefore wasting less heat.Also a lot of heat is lost around the sides of the saucepan.

When it comes to cooling down, the thick walls of the saucepan will retain heat longer than the thin ones of the kettle..

I don't know how much heat is generated by a gas ring (obviously depends on size ) but most electric kettles are 2.75 kilowatt,, which is the same as a three bar electric fire --- a lot.

A kettle holds about 2 litres of water and I suspect a saucepan more, and a larger volume of hot water will take longer to cool.. but longer to heat up..

As long as water reached its boiling point so it's 100 C. It might be heated very quickly if more heat is given to it to boil quickly. But losing heat is the same with all boiled water because water has the same specific heat.
You must make sure that the amount of water heated in saucepan and in kettle are equal, and also room temperature in both cases is the same.
