What specifically do you do as a mech engineer though? I'm trying to get a better idea of what the work environment, responsibilities, and common day-to-day tasks are.

I worked in the Pipe industry for 30 years. Companies included:
• XX Company - Little Rock, Arkansas
• YY Company, Tulsa, Oklahoma
• ZZ Company - Houston, Texas
At XX I started in manufacturing, moved to research and development and was promoted to applications engineering. Later as customer service manager and engineering manager.
For YY I worked as applications engineering supervisor. I left YY when the company was bought and went to ZZ for professional growth in a multinational company.
At ZZ Pipe Division I started in applications engineering, became field service manager and subsequently customer service manager and applications engineering manager.
I worked every summer in college including the Government for one year and GG for two years - all in engineering positions. Before college I was in the United States Air Force in weather service. I was stationed in Oklahoma City, Oklahoma in Air Defense Command and then finished my four years in Fairbanks, Alaska in Strategic Air Command. I was honorably discharged.
I am proficient at Powerpoint, Word and Excel. I understand how to make effective use of the internet. For minor issues, I was the "go-to" guy for computer issues at AA.

There is no EXACT thing that any engineer does based on their engineering discipline. The work environment varies from company to company to company and from assignment to assignment. The responsibilities and day to day tasks vary as well.
The best that can be said is, you have a great deal of say in the long run as to your work environment, responsibilities and what you are going to work on. That doesn't mean there won't assignments or work locations you would like to avoid but in general you do get a lot of choice if you want it.
In my 35 years working for a major oil company I have had more job assignments, work locations, responsibilities and interesting tasks than I care to take the time to relate here. I would just say I had a very interesting and profitable career.
