Wouldn't ink just not stick to paper like water bounces off objects and also, wouldn't gravity affect the way the ink comes out of the pen??

It's not the type of ink, but rather the special pressurized ball-point cartridge, invented by Paul C. Fisher. I've had one of these for years, and it's in my pocket right now. Very useful on Earth if you do a lot of writing in bed.

Well if theoretically they did do this kind of writing, the paper would absorb ink

pencils! and million dollar pens that pump ink out, no ink would stick :)
