I have heard that if we put a giant mirror out in space million and million miles away and look at it with a telescope that we will see the earth at a previous time depending on how far back the mirror is because the speed of sight is faster than light. is this true?

No. Nothing is faster than the speed of light.
The speed of sight doesn't mean anything - your eye (lens) merely focuses light onto the retina.
When you look at a star, the nearest one after the sun is alpha proxima I think, you are seeing it as is was when the light was emitted. In the case of alpha proxima, 4 light years away, you only ever see it as it was 4 years ago. You only ever see the sun as it was 8 minutes ago.
In the case of distant stars (13.5 billion light years away) we can only see them as they were 13.5 billion years ago.

The mirror theory thing might and might not work... since you couldn't possibly see the mirror if it is in outer space.
But there is a theory that my science teacher told me, that if we travelled in a rocket around the earth at the speed of light (which is crazy fast, mind you), we can go back in time.

Yes, except that the speed of sight is the same as the speed of light. But there is an easier way. It's called "video movies". There are movies of people an hundred years ago. By watching the movies, we can see how they were at a previous time.
