Wild sheep are adapted to have a relatively ideally suited coat to the environment. If it is too thick and they overheat, they die and don't pass on their genes. Domestic sheep have artificially select thick coats.

Wild sheep will shed their wool in the wild just as other animals do like the American Bison. Domestic sheep will also shed their wool if they are left too long.
