Im looking for a Single Pole Double Throw (SPDT) relay with a rating of 48 volts and 30 amps but all i can find are some rated at 20 amps.

Search for contactors, not relays. You will probably not find one described as "SPDT." Look for a contactor with one normally open (NO) and one normally closed (NC) contact. If you are looking for a direct current rating, be sure to pay close attention to DC vs AC ratings. At 48 volts and 30 amps DC rated contacts will be much more difficult to find particularly if the load is inductive.

your question is incomplete.
you need to specify coil voltage as well as contact voltage and current.
for high currents you need to look into contactors rather than relays.
they don't have SPDT poles, each contact (NO or NC) is separate so you need to wire them
accordingly. beware that on most contactors NC is only rated for smaller current such as 10, 16 or maybe 25A.
