There is such a lot of things they declare to be undisputed fact, however they don't mention the qualifiers. Is it arrogance, ignorance or is it something darker? For example there is a belief that you cannot extract more energy out of water than you put in, as water is apparently not a fuel source and thus cannot be used as such. What is not mentioned is that the problem is not that it cannot be done, but that it cannot be done yet with current technology in a viable manner. I have a big problem with anyone telling me what is and is not possible, and I feel they do themselves a disservice by making such statements.

The first answer is a good one, with the minor exception in the last comment, which actually in the same as your assertion "belief that you cannot extract more energy out of water than you put in"
The problem with your assertion is that it is not a belief - it is strongly supported by various aspects of chemistry and physics - water as we think of it is at the very lowest energy state (like ash from a fire) and there all kinds of ways to produce such water while taking energy out and no imagined theory for getting more energy out - unless you put it in first.
And if you are reading things which do not include the qualifiers, then you need to read stronger more complicated material.

"Are all scientists owned by big oil?"
Seeing as the overwhelming majority of scientists have nothing to do with oil-related research, the answer is obviously no.
"There is such a lot of things they declare to be undisputed fact, however they don't mention the qualifiers."
You appear to be blithely unaware of scientific literature. Disputes are in plentiful supply, as are mentions of qualifiers.
"Is it arrogance, ignorance or is it something darker?"
I'll leave you to judge whether commenting on things you're not familiar is arrogance, ignorance, something darker or a mixture of those options.
"For example there is a belief that you cannot extract more energy out of water than you put in, as water is apparently not a fuel source and thus cannot be used as such,"
I have good news. Using water power has in fact been achieved by various means.
