Is it always there, or what happens to make fungi grow on food and bacteria to make food go bad? I know this sounds like a basic question but I can't find it anywhere! Does anyone know?

Spores. There are microscopic spores all over the place. You're probably breathing in some right now.
They attach themselves to a place where they can grow i.e - a food source, they spread their hyphae which secrets an enzyme that dissolves and breaks down the food, it's absorbed and stored as glycogen.

Bacteria is all around us - even on and inside of us. It's a natural and necessary part of life. Some bacteria are more harmful than others. Given certain conditions, bacteria can grow and reproduce. That's when problems start. Depending on the individual strain, consequences of this can vary. For example, some fungi and bacteria like warm, moist areas. In these conditions, they will thrive. In that way, they are like any other life form.
