Just so you know, my mum does not lie. Anyway, she told me that when she was 10 or 11 she was at her friends house. Her friend was asleep and mum was looking out the window. She she a bright diamond shape object darting through the sky, it come down onto the road and then a car came. The cars headlights shone on it and the diamond and car both disappeared. This would have happened in 1980 or 1981. Did she see a UFO or something else? It was very big and she was in the country.

Since she wasn't able to identify what she saw, then by definition it *was* a UFO.
UFO means UNIDENTIFIED Flying Object -- in other words, a flying object that isn't identified. Common sightings of UFO turn out to be planet Venus, planet Jupiter, helicopters, high-flying airplanes, even satellites and rockets, particularly if it's a few hours after sunset and people are able to watch those because the Sun is still shining on them.
Many people don't know what goes on in the sky, so they can easily misidentify things they see, or confuse them for flying objects. You can see that many people don't know what they're looking at when you read about people surprised to see the Moon in broad daylight, thinking there's something wrong going on.
So yes, your mom saw something flying and that she couldn't identify. Many people do. We usually call those "UFO"s because people don't know what they are. I've read here people claiming that those are alien spacecraft -- but in that case, they're no longer UFOs because those people have (mis)identified it that way, but they seldomly bother to try to provide physical evidence indicating that it was an actual spacecraft.
