I read an article that said a female Red Deer (Cervus elaphus) is called a "hind". Would it be wrong to call it a doe?

Technically a doe is a female fallow deer while a hind is a female red deer. Common usage, however, has extended "doe" to all deer and it has been a female hare or rabbit for more than 400 years. It would be wrong to use "hind" of anything but red deer but you can use "doe" indiscriminately.

Yes you can. Any female deer is a Doe. I think that "hind" is specific to that species of deer, but doe is widely accepted and no-one would penalise you for it.
