I know that owls can turn their heads 180 degrees, but I was wondering if eagles can as well? I'm writing a story that involved an owl, then I changed it to an eagle, and there was a part where there was something on its back and it turned its head to look but I was wondering if that would fit an eagle, or if I should just cut that part out?

Nope, eagles can't do the 300 degree turn that an owl can.
This is because eagles hunt by sight whereas owls hunt by sound. So they need to turn their heads more to work out which direction the sound is coming from.
