When you state carboxylic acid, you are referring to organic acids. So putting them into sodium hydroxide gives the sodium salt of the carboxylic acid.

So take acetic acid, add NaOH and you form sodium acetate. Another way of thinking of it, nomenclature-wise, is that you have formed a sodium ester, hence the ending -ate.

and when it reacts with hydroxide, it gives off water
water is not a salt
so it really just depends what type of carboxylic acid that you use when you mix it with NaOH
