"Oh My God" is like a call for help/attention or like a beginning of a prayer to a superior being. It would be used when something exceptional/ surprising/ confusing/ mind-boggling is happening. It is usually part of an emotional reaction or part of an attempt to convey one.
Science does not have the need for that.
Scientists observe and keep their emotional reactions in-check for until later.
The emotional exclamations of a scientist vary depending on the scientist and the occasion but it is unlikely to include "OH MY GOD" in its religious meaning.

Like 'bless you', that's a phrase that no longer carries any religious meaning for most people, religious or non-religious. It's simply an expression.
